bellezza antica e sapori autentici: la storia di una razza che racconta la Ciociaria
Elegante e antica, la Capra Grigia Ciociara è una delle razze autoctone più preziose del Lazio, con pochi nuclei presenti soprattutto nelle montagne tra Frosinone e Roma, dove si concentrano le due aree prevalenti di allevamento tradizionale. Il suo mantello, di un grigio argenteo che sfuma nel cenere, la protegge dal sole e dal freddo: è il frutto di secoli di adattamento ai pascoli magri e ai pendii scoscesi della Ciociaria. Rustica e resistente, produce un latte aromatico e ricco, ideale per caciotte e formaggi a latte crudo dal sapore autentico, che raccontano le erbe dei monti e la sapienza dei pastori. Un tempo considerata la “mucca dei poveri”, oggi la Capra Grigia Ciociara è tornata protagonista grazie ai piccoli allevatori e ai progetti di tutela della biodiversità.
Curiosità: Nei paesi della Ciociaria, ancora oggi, dopo la mungitura si gusta la ricotta calda, servita con un filo di miele locale: un rito antico che sa di montagna, comunità e gratitudine verso la terra.

Elegant and ancient, the Ciociara Grey Goat is one of the most precious native breeds of Lazio, with a few nuclei present especially in the mountains between Frosinone and Rome, where the two prevalent areas of traditional breeding are concentrated. Its silvery-grey coat, shading into ash tones, protects it from both sun and cold: the result of centuries of adaptation to the sparse pastures and steep slopes of Ciociaria. Hardy and resilient, it produces aromatic, rich milk, ideal for small caciotta cheeses and raw-milk forms with an authentic flavor that reflects the mountain herbs and the wisdom of local shepherds. Once known as the “cow of the poor,” the Ciociara Grey Goat is now regaining prominence thanks to small farmers and biodiversity conservation projects.
Curiosity: In the villages of Ciociaria, even today, freshly made warm ricotta is enjoyed after milking, drizzled with local honey — an ancient ritual that speaks of mountains, community, and gratitude toward the land.
